Quinoa and Black Beans Mon, 23 August 2010 20:40
1 tsp vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
¾ c uncooked quinoa
1 ½ c vegetable broth
1/4 tsp cayenne pepper
1 tsp ground cumin
Salt and pepper to taste
1 c frozen corn kernels
2 (15oz) cans black beans, rinsed and drained
½ c chopped fresh cilantro

1. Heat oil in medium saucepan over medium heat. Stir in onion and garlic and sauté until lightly browned.

2. Add quinoa and vegetable broth into saucepan. Season with cumin, cayenne pepper, salt, and pepper. Bring mixture to a boil. Cover, reduce heat, and simmer 20 minutes.

3. Stir frozen corn into saucepan, and continue to simmer about 5 minutes until heated through. Mix in black beans and cilantro. Cook until heated through.

To Freeze: Freeze in freezer safe container.

To Reheat: Can eat cold as salad or reheat in microwave or pan and serve as main meal or side dish. Also try in tortilla.

This was ok. We added some different seasonings as tests and finally decided that Johnny's gave it the best flavor. Really it just needed some salt. I did add a little more cumin too. I think this will be really good in a tortilla...I'm going to try that with the leftovers. We used it as a side dish.
