Angel Hair Pasta in Red Sauce Wed, 11 February 2004 21:55
Olive oil
3 cloves garlic
3 lg. onions
1/2 bell pepper (I like to use yellow)
1 sm. tomato paste
1 tomato sauce
2 c. chicken broth
1 lb. angel hair pasta
The following ingredients to taste:
Salt
Pepper (red & black)
Hot sauce
Garlic powder
Celery salt

Cook angel hair pasta and rinse with cold water. Drain and coat in olive oil. Set aside. Cover bottom of pot with olive oil and heat on low heat. Add onions, garlic and peppers. Saute for 30 minutes, stirring occasionally. Add tomato paste and seasonings. Saute for 20 minutes. Stir often. Add tomato sauce and chicken broth and simmer for 20 minutes or until thick as desired.

To Freeze: Freeze in a freezer safe container.

To Reheat: Reheat in a covered pot until heated or in microwave. Serve over pasta with Romano cheese.

A little too spicy for me, but I really like the sweet flavor and bell peppers in it.

3 stars. We all liked it. I think I could be more liberal with the spices and let it boil longer so it's a bit less watery.

I have always found that you should undercook pasta when you intend to freeze it. It will finish cooking when you reheat it. Nothing worse than overcooked pasta. Yuck

A year later the second batch was great! The chicken broth does a great job of cutting back the tomato flavor, so the pepper flavors really come out.
