Potato Soup Wed, 11 February 2004 23:59
6 potatoes
1/4 cup margarine (smart balance)
1/2 cup 1% milk
8 oz low fat sour cream
1/2 cup low-fat buttermilk
1 medium onion chopped
5 green onions chopped
bacos
salt
pepper
garlic powder

Boil potatoes and onion until they are firm but starting to become of mashing consistency. Add butter. Salt and pepper to taste. Stir in the milk, sour cream and buttermilk in that order, stirring between each addition. Add green onions and bacon. Add garlic powder to taste.

To Freeze: Freeze in freezer safe container.

To Reheat: Heat in microwave until hot and thick, stirring every minute or so.

This actually tastes better when you use the lowfat ingredients. Good stuff. Very filling and comforting on a cold day.
