Onion Sauce with Roast Beef Mon, 20 September 2004 18:32
3 lbs onions, diced
4 lbs Round Tip roast, trimmed
2 cups Roma tomatoes, diced
1/4 cup basil, fresh, chopped
1 tsp salt
2 lbs macaronie, bow ties, uncooked
3 Tbsp olive oil
8 ounces tomato paste
2 cloves garlic, minced
1/2 tsp black pepper

Saute diced onions about 20 mins. in olive oil, stirring every few mins.

Add tomato paste and cook for 2-3 mins. Put tomatoes in blender for a few seconds, just to blend; add tomatoes, basil and garlic to pot with onions and paste.

In separate pan, brown roast on all sides in a small amount of oil. Add meat to sauce and bake at 250 degrees for 1 hr.

Cook pasta al dente and add to the sauce just before freezing.

To Freeze: Slice roast into thin slices and freeze in sauce.

To Reheat: Reheat in covered pot until roast is cooked to preference, serve with excess sauce.

Pretty bland, it needs something to flavor it up.

I think the noodles were supposed to cook in the sauce to add flavor, but I found it to be bland overall too. I didn't like it.
