Tator Tot Casserole Mon, 09 February 2004 01:13
2 lbs extra lean ground Beef
2 cans cream of chicken soup
1 cup non-fat cheddar cheese
½ minced onion
1 clove garlic
1 pkg tator tots

Brown ground beef with onion and garlic, salt and pepper to taste. Drain meat and place in 9x13" pan. Stir in soup and ¾ can of water. Spread cheese over top of meat. Top with tator tots. Do not bake now.

To Freeze: Freeze in a dish that can go from the freezer to the oven.

To Reheat: Cover with foil and bake FROM FROZEN at 350 degrees F for 45 minutes (this is to avoid overbrowning tots). Remove foil and continue cooking for another 15 minutes.

I just joined today and wanted to add a quick note about this recipe which I love -- for a little kick I add 1 can of chopped green chiles to the soup (drain them well) and then add pepper jack cheese instead and season meat with cumin -- very southwest. Thanks for this awesome website!
