Italian Meatloaf Thu, 11 May 2006 16:03
This is an adaptation of the Italian Turkey Loaf.

1 lb Ground Turkey
1/2 c shredded mozzerella
2 Tbls minced, fresh parsley
1 1/2 tsp minced garlic
2 Tbls tomato paste
1 tsp Oregano
1 tsp salt
1/2 tsp pepper

Combine ingredients and shape into loaf.

To Freeze: Freeze in freezer safe container.

To Reheat: Defrost. Bake for 1 hour at 350 degrees or until loaf is cooked through.

We really liked the flavor, but it was too salty. McKenna really liked it, too.

So sorry, but this was pretty awful. My husband, who often will choke it down, completely refused to eat it. I ate a slice, but the rest went to the dog. I can't put my finger on what the issue was, but it was not pleasant.
