Apple Pork Chops Wed, 11 February 2004 22:25
2 tablespoons olive oil
1/2 cup chopped onion
4 (1/2-inch thick) pork chops
1/2 teaspoon salt
ground black pepper to taste
2 apples - peeled, cored and sliced
2 tablespoons brown sugar
1/2 teaspoon ground mustard
1/8 teaspoon ground cloves
3/4 cup hot water, apple cider, or apple juice

Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.

Place chops in an 8x12 inch baking dish and sprinkle them with salt and pepper. Cover the chops with the apples and cooked onion.

In a small bowl, combine brown sugar, mustard, cloves and water. Pour over chops.

To Freeze: Freeze in a freezer safe, oven ready dish.

To Reheat: Heat oven to 375 degrees. From defrosted, cook for 30-45 minutes or until pork chops are cooked through. From Frozen, bake at 375 degrees for 1.5 to 2.25 hours, or until pork chops are cooked through.

Used chunky applesauce instead of apple slices this time, and I liked it better. Also, not sure if I measured cloves incorrectly, but I would prefer a little less clove taste. Maybe lessen cloves just a bit.

Not a fan. Don't like pork chops, so this is a no win for me. ;) Even with pork loin, this one just doesn't do it for me.
