Baked Garlic Parmesan Chicken Wed, 27 April 2005 21:48
2 tablespoons olive oil
1 clove garlic, minced
1 cup dry bread crumbs
2/3 cup grated Parmesan cheese
1 teaspoon dried basil leaves
1/4 teaspoon ground black pepper
6 skinless, boneless chicken breast halves

Lightly grease a 9x13 inch baking dish. In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.

To Freeze: Freeze in freezer safe container.

To Reheat: From defrosted, bake 30 minutes in the preheated 350 degree oven, or until chicken is no longer pink and juices run clear.

Yum, very flavorful! I like this much better than the nuggets.

Kids liked it. I'm not a fan of parmesan, so this was a bit too much for me.


12/11/07 - Ok, take these out of the baking pan. Put them on a cookie sheet sprayed with cooking spray into a 375 oven for 10 mins or so, turn do another 5-10 minutes. They get crispy and really, really yummy!
