		Sweet and Spicy Beef Ribs

2 racks baby back ribs 
1/4 cup hoisin sauce 
1/4 cup Chinese plum sauce or apricot preserves 
1/4 cup rice wine vinegar or white wine vinegar 
2 tbsp soy sauce 
2 tsp minced garlic

Pre-heat the oven to 250 degrees.  Cut racks into individual ribs and sprinkle with salt and pepper.  Heat a frying pan to high heat.  Sear each rib and then place in a roasting pan.  Add water to the roasting pan until the ribs are just covered.  Put them into the oven for 3 – 6 hours, checking often.  The meat should just barely resist being pulled, but should not be falling off the bone.  3 hours was perfect in my oven.
 
Mix the ingredients together in a bowl.  When the ribs are done, put them in a freezer safe container and cover them with the BBQ sauce.
 
To Freeze: Freeze in freezer safe container.
 
To Reheat: Defrost ribs.  Grill them on a BBQ until heated through.  Warm left over BBQ sauce for dipping.
